Can I use my own router with Vodafone Cable Germany?

Yes, while keeping the Vodafone Station as the cable modem. Vodafone documents Modem/Bridge Mode, which passes the public IP to LAN port 1 and disables the gateway's normal Wi-Fi/router role.

Bridge mode removes the router role, not the cable modem

The Vodafone Station still terminates DOCSIS from the coax network. Your Ethernet router takes over NAT, firewall and Wi-Fi behind it.

Availability has regional/account conditions

Vodafone documents region-specific activation paths and notes conditions such as Dual Stack/IPv4 and SuperWLAN/Homespot settings. Use the current account instructions rather than assuming one menu applies everywhere.

Phone and provider features can be affected

Vodafone's own Bridge Mode explainer notes that router functions including Wi-Fi and telephony can be disabled/affected in modem mode, so bundled services deserve a separate check.
