Can I use my own router with Google Fiber / GFiber?

Yes. GFiber currently says customers can use their own router, and its current Wi-Fi guidance says the router can plug directly into the Fiber Jack without enabling bridge mode.

This is a true router replacement

The Fiber Jack remains because it is the fiber termination point, but the GFiber router itself does not have to remain in the path for the documented own-router setup.

Multi-gig plans change the hardware question

A router can be protocol-compatible yet bottleneck a 3, 5 or 8 Gig service if its WAN/LAN ports are slower. Hlonix therefore treats physical port capability as a separate buying consideration.

Support boundary

GFiber notes that third-party router support is limited. Keep enough information about your original setup to reconnect provider equipment if troubleshooting requires it.
